Spirit: Rum

Background: The rum comes to us from Mexico.  Made from cane juice, fermented in pine tanks and local spring water, it is then distilled in a 3 plate column still.  Let’s see how it tastes.

Age – Unaged

Nose – Lot’s of earthiness along with fruit.  Some apple skins, papaya, some vanilla cream, fresh cut grass and dug up earth
Taste – Lot’s of sweet cream, vanilla ice cream, maple syrup, strawberries
Finish – Gets a bit hot with black pepper, burnt sugar, almost a little malty and a touch of sulfur on the back end

Score: 6
Would I buy a bottle? Yes

Thoughts: This was really interesting but enjoyable.  A bit of a funky nose, and then really creamy and vanilla sweetness.  The finish was a bit hot for 43% and the sulfur note showed up slightly, but doesn’t ruin the experience.
