Description: Domaine du Tertre: Seelbachs
Spirit: Calvados
Background: This is a 16 year old Calvados single barrel that was selected by Seelbach’s working with PM Spirits. Calvados is French Apple Brandy made in Normandy. Domaine du Terte is run by two brothers making small batches of spirits from around 30 different varieties of apples and fermented for 6 months before being distilled in a column still and then aged in French Oak. Cask strength, no additive Calvados is a rarity so I’m excited to try this.

Age – 16 Years
Nose – Sharp but sweet apple cider, molasses, brown sugar, toasted marshmallow and oak, the slightest touch of chocolate. The oak and cider really play well together and makes such a comforting smell
Taste – Thick and syrupy, maple, apple, raisins, chocolate, vanilla. Basically apple pie and vanilla ice cream.
Finish – Oak, bitter apple, cinnamon, tobacco, pie crust. It’s just a touch on the hot side

Would I buy a bottle? At $250, it’s expensive, but it is really tasty and it’s hard to find something else like this out there. I don’t think anyone would feel disappointed if they paid for it.
Thoughts: Everything about this was just so tasty and comforting. The only real drawback is the finish definitely ramps up in intensity and is a touch hot for the proof. It’s really tasty though and I really hope to see Seelbachs/PM help bring in more stuff like this.
