Description: Rolling Fork Kentucky Cask Series El Salvador
Spirit: Rum

Background: Rolling Fork is a US company that is bringing in foreign rums to finish aging in Kentucky before being released.  This was distilled at the Chiuatan Distillery in El Salvador for 10 years and then 22 months in Kentucky.  This blend is a combination of bourbon, rye, sherry and port barrels.  This is the first release, batch 2020B1

Nose – Molasses, maple syrup, dark cherry, cooked apple, cinnamon sugar, dates, cocoa nibs
Taste – Rich oak, a slight medicinal cherry, dark chocolate, tobacco, maple extract
Finish – Tart cherry, tobacco, baking chocolate, burnt apple tart

Score: 5
Would I buy a bottle? No, but it’s mildly interesting and not outlandishly priced ($85) like some of their other products

Thoughts: With the solid age, the oak is well integrated, but I worry about all the different casks.  It feels like so much is going on and it’s all fighting each other without much harmony.  There are lots of flavors in there but not in layers of complexity that would make it more enjoyable.
