Background: Another bottling from Scotch Universe. This is a 12 year Caol Ila whisky that was aged in a first fill ruby port barrique. Distilled in 2007 before bottling in 2019.

Nose – Peat is there but fairly muted, light apples and pairs, lemon, some cocoa
Taste – Thick and jammy, grape jam, honey, graham cracker, cherry, smoked plums
Finish – Toasted bread and jam, smoke and oak, spice comes in nicely with a touch of sulphur and brine at the very back end.

Would I buy a bottle? Yes
Thoughts: I really enjoyed this. Lots of bread and jam and the peat is very much in control and not dominant up front. Loved the mouthfeel too. I’m wondering if I’m a bit sensitive to the sulfur notes but it was just a little bit at the end but gave me a little negative reaction at the end of a sip.
