Background: This single barrel of American Rum comes from Barrel P227, an ex-bourbon barrel. Aged for 4 years, this one was picked for it’s pale color, to try and show off a small influence of oak to compliment the distillate. Let’s see how it fares.

Nose – Honey, freshly ground coffee, almond, fresh sourdough bread, torched banana
Taste – Toffee, apple pie, caramel, almond paste,
Finish – Big hit of spice; cinnamon, clove, gingersnap cookie. Just a touch of oak after the spice fades

Would I buy a bottle? Probably not
Thoughts: This was pretty well rounded. Lot’s going on with the nose, creamy and composed on the tongue, but the proof hits a little hard with the spice. But it’s nice to see them target something with decent age but without the barrel having so much influence. Really shows how well their distillate stands up.
