Description: Privateer Distiller’s Drawer #72 “Gilt Equinox”
Spirit: Rum

Background: This is a single barrel of rum from Privateer, aged for 2 years and 11 months in a used cask (hence the color) and bottled at 55.7% ABV, Privateer notes that this carries strong influence from the pot still and it’s production of 2-Phenylethyl Acetate.  Let’s taste it

Nose – Honey, freshly ground coffee, almond, fresh sourdough bread, torched banana
Taste – Toffee, apple pie, caramel, almond paste,
Finish – Big hit of spice; cinnamon, clove, gingersnap cookie.  Just a touch of oak after the spice fades

Score: 5
Would I buy a bottle? Probably not

Thoughts: This was pretty well rounded.  Lot’s going on with the nose, creamy and composed on the tongue, but theT proof hits a little hard with the spice.  But it’s nice to see them target something with decent age but without the barrel having so much influence.  Really shows how well their distillate stands up.
