Background: An offering from the Independent Bottler Signatory, this whisky was distilled at the Islay distillery of Bunnahabhain on February 13th, 2007 and aged for 12 years in a first fill sherry butt before being bottled on October 10th, 2019 by Signatory without chillfiltration, coloring, or dilution. Let’s dive in.

Taste – Thick mouthfeel, honey, sweet bread, apple pie
Finish – Explosion of cherry, roasted nuts, tons of baking spices, rich malt, just a tad bit too hot

Would I buy a bottle? Probably
Thoughts: Another solid SV Bunna. Lovely nose and taste, but the finish was such a hit of fruit and pastry. The ethanol just slightly pushes too far on the finish which keeps the reins on it. Still, very good and another example telling me to grab a full bottle for myself.
