Background: Today we have a gin that interestingly comes from a base of maple sap. Distilled in very small quantities once a year. Aside from juniper, I can only find that there are 14 botanicals but none other named, so let’s just taste it to find out.

Nose – Christmas tree sap, thyme, tart citrus
Taste – Molasses, lemon peel, cinnamon, balanced juniper
Finish – Blast of tart citrus, juniper, rosemary, black pepper, good length and slightly drying

Score: 6
Would I buy a bottle? Yes

Thoughts: Onto my first gin review and figure to start off with something a little different and interesting.  I was expecting more of a maple syrup note but I specifically got molasses on the taste.  The juniper was well balanced though, something that my gin experience prior to reviewing did not lend me to believe it was possible. This is on the pricier side (about $50) for a gin, but if you like sipping and want something different, or an amazing cocktail ingredient, then this is something you need get your hands on.
