Description: The Ultimate Whisky Company Ballechin 2005

Background: Here we have an 11 year old single malt distilled by Ballechin on August 25th, 2005, and aged in an ex-bourbon barrel until it was bottled on January 25th, 2017. Non-chillfiltered and no color added, it comes in at a cask strength of 56.2% abv. Cask #177 amd bottle number 205 of 221.

Nose – Tobacco smoke (more cigar than cigarette), cherry, honey, raisin, graham cracker
Taste – Peat starts to pick up more, milk chocolate, honey, graham cracker, nice and creamy texture.
Finish – Peat gets a bit aggressive, chocolate turns a bit from sweet to slightly bitter, lingering clove spice, some burnt oak.

Would I buy a bottle? Yes
Thoughts: This was a fun experience as I loved the way transitioned from nose to finish. The peat was well balanced, lots of sweetness that turned bitter but no in an extreme and kept the whisky entertaining the whole way through while maintaining balance despite the changing flavors. Similar aged bottles from Ultimate and Ballechin can be had for less than $100 and I think that is more than a fair price for these bottles.
