Description: Copper & Kings Absinthe Alembic Blanche
Spirit: Absinthe

Background: This is an Absinthe from C&K that is then aged in ex-bourbon barrels for a short period of time.  Made from a base of grapes and authentic absinthe botanicals, they use no added flavors/sweeteners/color/chemicals post distillation.  This is my first real objective look at a liqueur (and I have little experience with absinthe) but I figured why not try it while at the distillery?

Age – NAS

Nose –  Lots and lots of licorice, clove, anise, baking chocolate, orange
Taste – Caramel, cinnamon, black licorice, juniper, lavender
Finish – Licorice, fennel, just a touch of oak on it

Score: 7
Would I buy a bottle? Yes

Thoughts: Again, this is my first critical analysis of a spirits category so a bit of a learning experience for me, but at first all I got was the heavy licorice, but then I was able to pull some subtleties out from it.  I think the oak influence is apparent but in a well balanced way.  I could absolutely see myself using this to make some high quality cocktails, or sipping on as a digestif.
