Spirit: Sotol
Background: My first taste of Sotol! (Yes, not agave but I will be filing reviews under them since their relation is similar). This was distilled by Alejandro Vasquez with shredded sotol in a copper alembic still. Fermented with wild yeast in pine fermenters. No idea what to expect so let’s just jump in!

Nose – Woah, super sweet with fruits and flowers, juicy fruit gum, rose water, all balanced with some earthy clay and minerality, a little bit of chlorine. The more air time the more tamed the sweetness and fruitiness become. Maybe just a hint of smoldering campfire towards the end.se danish
Taste – Grilled pepper sweetness, red apple, red grapes. Very bright and fresh feeling, floral. Restrained sweetness is my thought (which is a very positive thing).
Finish – Turns a bit more earthy than sweet but stays away from bitterness or pepper. Maybe some light mint? A light taste of chlorine like when you accidentally swallow some pool water. Then all of a sudden a wave of savoriness. Like a juicy, but quite salty bacon. Very crazy but surprisingly well composed with it

Would I buy a bottle? At $150, it’s high up there but it’s very enjoyable. Probably one I would enjoy a bottle of but not need to replace.
Thoughts: My first sotol and apparently I’m starting on the high end, but this was super crazy and interesting in the best ways. The experiences take some huge swings, but in a way that works (which I value a lot and think adds a lot to the tasting). I feel like this is one that every pour would bring different notes. The bacon note was crazy and distinct and really came in when I wasn’t expecting it on the finish. High quality and tasty make it easy to forget the price tag.
