Background: Wrapping up the Louisiana Rum series, this one comes from Celebration Distillery in New Orleans. There’s not much information on their site other than this is “Purely polished distillate at 121 proof! Nothing added, simple and smooth.” Let’s see if that rings true.

Nose – Sweet cream, vanilla, white sugar, gingerbread, molasses cookies, coffee, a little bit of melon cuts into the richness
Taste – Sweet and rich, coconut, chocolate, a bit of green/earth but even that has some sweetness to it
Finish – Gingersnap cookie that maybe was a little over cooked, chocolate, eucalyptus

Would I buy a bottle? Yes
Thoughts: Wow, this was surprisingly good. When I think of something like a Jamaican unaged spirit have more fruit, this is heavy on the rich side. Sweet but not overly so, This had nice depth and I bet you could make some killer cocktails with this.
