Description: Rest & Be Thankful Octomore 6 Year Bourbon Cask
Spirit: Scotch
Background: Independent Bottler, Rest & Be Thankful, has some crazy cool looking bottles but also has filled them with a couple of Octomores that I’ve been able to get some samples of. This one was distilled on March 19th, 2008 and bottled November 19th, 2014 aging in an ex-bourbon cask. Specifically, this is cask #B000005708.

Nose – Cooked pear, almost a ripe mango smell, sweet smoke, meringue pastry, sweet cream butter, burnt pie crust, nougat, barley sugar, vanilla custard
Taste – Extremely silky mouthfeel, sweet lavender (??), lemon curd, the juice/syrup in a can of pineapple slices, buttercream frosting
Finish – Lemon is a bit more tart but in a positive way still, campfire that had a s’more marshmallow fall into it, charred pineapple, a bit of umami flavor in there too

Would I buy a bottle? Yes
Thoughts: I didn’t think I would like this based off of some of the .1 releases I’ve had, but this blows them out of the water. It’s like a high class patisserie. Sweet but delicate and complex all at the same time. At 6 years, you think the peat might be a bit stronger but instead it integrates itself so well with the other flavors. Tons of tropical fruit and sweet citrus, this is one great whisky.
