Description: Rest & Be Thankful Octomore 7 Year Sauternes Cask

Background: Following Rest & Be Thankful’s 6 year, this adds an additional year of aging of the super peated distillate. Distilled on the same date of December 19th, 2007 but then aged in Sauternes until August 12, 2015, we can see how essentially the same distillate changed with a little bit more age on it. This is cask #2007003810.

Nose – Milk and sugar coffee, fresh wheat bread, sweet cinnamon, christmas spices (includes tree sap), fruit cake, fruity pebbles
Taste – Lemon juice, chili oil, vanilla cream, mild sweetness but hard to tack down, light honey
Finish – Angel food cake, cinnamon sugar, dark coffee, bitter wood, burnt caramel, tart smoke, bitter chocolate

Would I buy a bottle? No
Thoughts: Certainly has its differences from the 6 year, but doesn’t quite separate itself as a whiskey. Nothing super memorable or outstanding and a fair amount of ambiguity and bland/bitterness that doesn’t really align with me. I don’t mind sipping it, but I’m not in a rush to drink it. Just very average to me.
