Background: New Holland Artisan Spirits is a small craft distillery in Holland, MI. Tied to their brewery most known for their Dragon’s Milk Stout, they also distill a variety of spirits. Surprise, I got this on a work trip when I was still grabbing local craft spirits. This is made from Michigan grown wheat, and aged for 14 months in new American oak, so let’s see if it was enough.

Nose – Shredded wheat cereal, sweet bread, honey, vanilla, cherry
Taste – Honey, butterscotch, wheaty crackers, and then swoops in with a sour bite of ethanol
Finish – Sour grapes, burnt toast, long and harsh heat

Score: 3
Would I buy a bottle? No

Thoughts: The nose on this was actually pretty pleasant, and the initial taste was pretty nice, but then the youth just comes in with this very bitter, sour note and it doesn’t leave. The sourness of it has me worried it could be an issue with the distillate rather than it just being young, grainy and hot. Either way, this needs more time.
