Description: Doctor Bird Pineapple Rum

Background: This is a rum from Worthy Park and bottled by Corktown Distillery in Detroit. The rum is aged, not sure how long but it does say it is finished in Moscatel casks. I’m also not sure how the pineapple is incorporated. I don’t believe they are dumping juice into it but I’m not sure if it is in the still during distillation or macerated after the fact. It does say “rum with natural flavors” so maybe not in the still. It is bottled at a whopping 57% though, so it’s no sweetened liqueur.

Nose – Woah is it funky, diesel fumes and rubber, behind it is a bit of sweet cream, fruity but not sure if grape or pineapple, then some coffee and milk chocolate comes in at the very end
Taste – Caramel, dried pineapple, milk chocolate, vanilla, almost a sweet smoke (maybe more of a “liquid smoke” flavor)
Finish – Chocolate and coffee break through the funk with some charred pineapple in there as well, sweet floral notes

Would I buy a bottle? Yes
Thoughts: Very much enjoy that the pineapple isn’t overly aggressive but very well integrated. This is definitely Jamaican rum at it’s core. It is well priced, and the high proof makes it such a great cocktail ingredient. A pineapple Kingston Negroni is absolutely killer.
